6个蒸鱼要点让你做出鲜活的清蒸鲳鱼

点击进入我的微博：我的轻博客：近来还是有很多博友请求加好友，实在抱歉好友人数已满，所以请大家加我关注或者收藏我的博客都可以，那样看的时候就非常方便了!谢谢大家的支持！中秋节三天就这么快过去了啊。放假真好，吃喝玩乐，彻底放松。吃团圆饭，还有自然是很多很多的鲜肉月饼。我做的当然不够吃，但丈母娘还有我的姐姐都买了好多的鲜肉月饼送来。现在甜的月饼还真的吃的人不多，所以新鲜刚出炉的月饼卖的最好，还要排很长的队伍才能买到。虽然家里那几天有很多鲜肉月饼，但是早上吃，晚上当夜宵，很快就消灭殆尽了。快乐的三天就这么过去了，今天开始就又要上班了，呵呵，鼓足干劲，好好工作，盼望国庆节的早日到来吧！大家都喜欢吃蒸鱼，那是因为蒸好的鱼肉味道非常鲜美，水嫩多汁。但是如果你方法掌握不当，你会发现蒸出的鱼看上去还可以，可是鱼肉却不怎么鲜美，感觉里面没有水分，有点“木”，这除了和鱼的特点有关外，最主要的还是在做蒸鱼的时候要注意以下几个细节：1.做蒸鱼，做好不要在鱼身上划几刀，很多人认为这样鱼可以更加入味，其实这样鱼里面的水分会流失，口感大打折扣；2.做蒸鱼要选择新鲜的鱼，冷冻的鱼一般不适合做清蒸，而且最好买回来自己杀鱼，因为菜场里很多时候是把鱼摔死，导致鱼内脏出血，会有腥味，这样的鱼口感也会影响很多；3.为了让鱼入味，可以用盐擦拭鱼的全身，然后腌制15分钟就可以，但时间不要超过20分钟，因为盐有去除水分的作用，会使鱼肉失去水分影响鲜嫩程度。4.蒸鱼的时候要让锅里的水开了后再放入蒸锅，根据鱼的大小时间在5到8分钟就可以了，但一定要将鱼一次性蒸熟，由于没蒸熟而再次翻蒸会使鱼吃起来发“木”；5.蒸好后不要马上揭盖，利用锅里的余温再蒸8分钟左右，这也是保证鱼肉鲜美的一个关键步骤；6.为了让鱼肉更有味道，把蒸鱼后的汤汁，倒回锅里，加入调味料，勾芡后重新淋在鱼身上，这个步骤就是给蒸鱼锦上添花啊，也是最为重要的收关步骤！原料：鲳鱼　　调料：盐　豆豉　料酒　生姜　食用油　生粉1.鲳鱼洗干净，把腮摘除，鱼嘴下面剪一个小口，把内脏清除就可以了。鲳鱼的肚子里的东西很少的，特别轻松就可以搞定!2.鲳鱼放入盘子里;3.用盐擦拭鱼的全身腌制15分钟;4.加入适量的料酒;5.加入生姜碎;6.加入豆豉;7.把豆豉均匀铺开；8.放入一勺食用油，水开后放入蒸锅蒸5分钟后关火再蒸8分钟；9.把蒸鱼后盘子里的汁水倒在锅里，调味；10.勾芡后淋在蒸好的鱼上。　　　　　　　撒上葱，淋上芡汁，清蒸鲳鱼大功告成啊！我放了点红椒装饰一下呵呵！　　　　　　　　　　　　　　蒸鱼也是最大的保留了鱼的营养，关键是鱼肉鲜嫩好吃，这才是最重要的！学习英语：1.I love three things in thisworld.
